docs: add Memcached backend to all documentation#71

Update README, configuration guide, getting-started, api-reference, backend-guide, comparison, data-flow-architecture, and docs hub to reflect cachekit's four built-in backends: Redis, CachekitIO, File, and Memcached. Remove references to non-existent HTTP and DynamoDB backends (those remain as custom backend examples only).
