column size is can only be adjusted to a minimum that is too wide for most of its content (e.g. date of birth) -> a lot of unused space.

This is a configuration problem of tasks, here we usually have a table column min size of ~120 pixels, which can be lowered. The consideration behind this was to preserve the column name to be always fully visible, but if we dont require this any reasonable minimum above 40-80px (for the sorting and filter buttons) should work and in case they can also be clipped even lower.
