Hey aXe18, there are a few things you may be able to change to minimize the performance impact of Simple Stack. The cause of the heavy performance is that every time an item's max stack size is calculated, Simple Stack runs. This happens a lot, hence why it's the most needy plugin. Here's a few things you can try for optimization:

• Install a plugin to decrease the amount of items dropped on the ground. Alternatively, Spigot has a setting you can configure to increase the distance that two stacks can combine on the ground. (spigot.yml world-settings.default.merge-radius.item)
• If your world has a lot of hoppers (big performance impact since hoppers check stack sizes every few ticks), you can decrease the rate at which hoppers operate in spigot.yml. world-settings.default.ticks-per (both hopper-transfer and hopper-check can be increased). Note that this will slow down overall hopper speed.
• If your Simple Stack config is large (many items with custom stacking values), this could cost performance too. The unique items list has the greatest performance impact since it compares all item properties. The other two lists still have a performance impact, but less so. If your config is smaller, you'll have better performance. This system was heavily optimized however, so as long as your configuration isn't huge I wouldn't worry about this.

I will note that Simple Stack is still a development version, and once I have more free time I may be able to optimize the plugin a bit more for an official release. Hope this helps!
